  1. Bata o pó de kishk com 1 xícara de água fria até não restar nenhum grumo. Reserve.
  2. Aqueça o azeite em uma panela pesada em fogo médio. Acrescente a cebola fatiada e cozinhe até dourar e começar a caramelizar, cerca de 12 minutos.
  3. Acrescente o alho e a pimenta de Alepo. Cozinhe por 2 minutos.
  4. Acrescente à panela as 2 xícaras restantes de água ou caldo e deixe levantar fervura branda.
  5. Despeje a mistura de kishk, mexendo sem parar. A sopa engrossará rapidamente conforme aquece.
  6. Cozinhe em fogo baixo, mexendo com frequência, por 8 a 10 minutos, até o mingau atingir uma consistência espessa e cremosa.
  7. Prove o sal — o kishk já é salgado e azedo, então acrescente com cuidado.
  8. Sirva em tigelas, com hortelã seca esfarelada por cima, um fio de azeite e pão sírio fresco.
