  1. Deixe o grão-de-bico seco de molho em água fria por 18–24 horas. Ele praticamente dobrará de tamanho. Escorra bem e seque com papel-toalha.
  2. Num processador de alimentos, pulse o grão-de-bico hidratado até formar uma farofa grossa — NÃO uma pasta. A mistura deve apenas se firmar ao ser apertada, mas continuar granulada.
  3. Adicione a salsinha, o coentro, a cebolinha verde, o alho, o cominho, o coentro em pó e o sal ao processador. Pulse novamente até tudo ficar finamente picado e bem incorporado, raspando as laterais.
  4. Transfira para uma tigela, adicione o fermento em pó e misture bem. Leve a mistura à geladeira por pelo menos 30 minutos (e até 24 horas) — isso a firma e aprofunda o sabor.
  5. Aqueça o óleo a 175°C numa panela funda. Teste com um pedacinho da mistura — ele deve chiar na hora e flutuar.
  6. Modele a mistura em bolinhas do tamanho de uma bola de golfe ou use um molde de falafel. Pressione gergelim na parte externa de cada bolinha.
